Butternut Spiced Chips

Of all the things I miss since changing the way I eat, potatoes stick out as one of my top 10 missed foods. Throughout the holidays and at countless outings starch/potatoes/spuds are a staple food for many. However, if you are like me and have eliminated it from your diet you seek an alternate that is just as good if not better! Well today I present to you a recipe that will not only wow your guests but also secretly give them lots of nutritional benefits unknown to them.

These tasty side’s to any meal are packed full of Vitamin A, E, Folate and lots of minerals! In addition this “powerfood” is rich in carotenoids, shown to protect against heart disease. It has been shown to be beneficial in protecting against breast cancer, age related macular degeneration and healthy lung development in children due to the beta-carotene that your body converts to vitamin A.

Check out my nutritional breakdown here! I estimated that 1 winter squash will make about 8-10 servings depending on much you eat! I sometimes just have these as a meal themselves!!

The key to these butternut squash chips is the garlic and spice! Now if you find you are someone who is sensitive to spice I would suggest only adding a dash of cayenne pepper and see how you fare. These taste great with just garlic as they do with spice. I like a good kick to my food so I had 3 key spices: Cayenne pepper, cumin & chilli powder!
