Butternut Squash and Curry Soup

As some of you may know, Canada has many seasons; Pre-winter, Winter, Post-Winter and Scorching Humidity. We are officially now coming out of winter! So before the season ends and people shy away from soups I wanted to share one of my favourite soups! Not only does it taste great, it is rich in vitamin A!

This is a fairly simple recipe that tastes fantastic and a huge crowd pleaser! With many of those on restrictive diets like myself (SCD) we must ensure to use only the best ingredients for soup! Of key importance is the broth! Many store-bought broths are high in sodium and contain preservatives not allowed. For those people, I have included in this post a quick recipe to make your own SCD/GI friendly chicken broth.

When presenting this soup to guests I suggest garnishing the soup with toasted pumpkin seeds and a bit of parsley or cilantro. If you are interested in the nutritional breakdown I have provided it once again!
