Spicy Toasted Coconut Spinach

This weekend I scoured the internet and various cookbooks to find something I could use as a side dish for this summer. Something that was not only healthy, SCD friendly and could be used as a garnish or side. TADAH! Well here it is a unique blend of flavours with a great spinach base.

Before starting this recipe you will need to take about 2 tbsp of coconut (unsweetened) flakes. Scatter them on a parchment lined baking sheet and put in the oven until they begin to brown. Alternatively you could use a skillet/wok and do this on the stove top. Which ever way you choose make sure you do not burn them or you will need to start again!!
