Mango Avocado Coconut Milk Ice cream

Need a healthy way to cool off? Its time you try this sugar-free Mango Avocado Coconut milk based ice cream. It is not only lactose-free but also sugar-free. At first I was kind of

hesitate about this combination but I was assured that the flavours would blend quite nicely so I put some ingredients together and picked them carefully. First, go for a sweeter and smaller mango, the Ataulfo mango. This mango is not only tasty but lately I’m finding them everywhere, and quite cheap. These mangoes are very low in Saturated Fat, Cholesterol and Sodium. They’re also a good source of Dietary Fiber and Vitamin B6, and a very good source of Vitamin A and Vitamin C.

Second, choose the largest avocado you can find!  Florida avocados or the ones shipped in from south america are nice and big. Some may debate with you whether or not these have the same flavour, but what you want, is a mild to medium flavour (not over ripe) with lots of flesh which will make your ice cream nice and creamy.If you can only find the standard small avocados, you will need 2, but it will work just as well!

This recipe is a wonderful addition to any diet including the Paleo, GAPS, lactose-free, sugar-free or Specific Carbohydrate Diet. I have also indicated in the recipe to add a bit of vodka. The reason for this, is that coconut milk on its own will freeze solid. However, the addition of a high alcohol spirit (Vodka) will help ensure the ice cream freezes to a lower viscosity and remain scoop-able. However, if you are making this for a party and don’t plan to freeze any, then go ahead and omit it! This ice cream is creamy and wonderful and after only 30 minutes in your standard ice cream maker! I rarely have any left overs!
