Asparagus and Prosciutto Frittata

What better way to start brunch then with the perfect Frittata. For those of you hesitant about egg consumption, calories or the common misconceptions of the egg facts from yesteryear, I encourage you to read the GastroChef Egg Assessment. Most of what we know about food from our parents and friends is simply old wives tales based on half-truths and misconceptions. When it comes to health and digestion trust a scientist (points to self).

Today’s brunch frittata is not only simple but incredibly tasty with the addition of asparagus and prosciutto. Make sure you buy the prosciutto from a reliable source or fresh from a butcher to ensure it has no additives or preservatives with many store-bought versions have. Alternatively you can substitute this with any meat or vegetarian option you see fit. For the asparagus, ensure you buy fresh bundles and that the tops can easily crack off. You should not need to chop them off, if they are not fresh then the tips may not snap off.


Most people when they see asparagus or talk about having just had some, they are likely referring to the effect asparagus can have on the body… that being… making your pee stink. From a scientific perspective, it is actually quite interesting. The sulphur smell produced has been reported throughout the ages and to date there are 2 hypothesis about the cause, both with its own support. However, as there is no clinical problems associated with the smell the effect receives scattered attention.


1) There is a genetic basis, in that some people carry a mutation that causes this smell, while others do not.  Production of odours are generally a result of inborn errors of metabolism. This has been reported in other food metabolism issues such as the fish door associated with trimethylaminuria (related to the FM03 gene)

2) Everyone produces the odour, but individuals differ in their ability to smell or perceive it. When someone has a perfect sense of smell but yet cannot detect some things, we refer to this in the scientific/healthcare world as “Specific Anosmia“. In 2010 Eriksson et al. reported that certain genetic alleles of an olfactory gene were associated with perception of the door or production of the odour in urine.

 So what’s the conclusion? Well we are unsure but research is still going on in various labs to deduce what genes potentially could cause this effect. So keep on enjoying your asparagus.. but maybe… not make it a daily food :)
