A healthy, grain & sugar-free bread that combines spinach and pistachios? Weird? nay.. delicious. Recently, I was looking through various cookbooks, blogs, website to get idea and i stumbled upon one that was incorporating veggies into their baked goods. Well this got me thinking that why not incorporate some spinach into a bread load but also add in a bunch of other super foods that are packed with nutrients, vitamins and digestive enzymes to make the ultimate guilt-free healthy bread treat.
I choose spinach as it naturally contains good levels of thiamine, potassium and fibre that aid digestion while also containing various plant enzymes and compounds that have a demonstrated positive effect on the body like chlorophyll.
Finally I decided to use pistachios as a secondary flour and garnish. Pistachios have been found to deliver health boosting phytochemicals which contain various components such as dietary fiber that aids in the growth of beneficial gut bacteria. In a study by researchers out of the University of Florida, researchers found that individuals who consumed 3 oz of pistachios regularly has greater increases in beneficial gut bacteria than those consuming almonds. Additionally, a one-ounce serving provides 3 grams of dietary fiber (12% of the recommended daily value)! They are also a great source of vitamin B6, copper, manganese, phosphorus and thiamine!
So try it out! This recipe is easily adjusted to what you have around the kitchen as well, change the level of honey to make the load as sweet as you want! Taste the batter! Yum!
